Biscuits!

We’re working on some ideas around here, and this weekend was a banner one. Last night we wrangledsome friends for a biscuit sandwich throw down and man oh man this summer is going to be great.
The best news is the biscuit – I’ve made quite a few versions in the last few days and the first attempts were a bit demoralizing. Mostly I was worried I’d have to use shortening since that’s the classic, but my final attempt was made with all butter and they are exactly the caliber of biscuit these sandwiches need. Crispy tops and bottoms, fluffy insides with some actual flavor besides “pasty.”
A big thanks goes to my friend Martha Foose, I used some critical techniques from her cookbook Screen Doors and Sweet Tea. We hung out with those guys in Mississippi a couple weeks ago and got all sorts of inspired for a foray into deliciousness.
One month until the Kingfield Farmers Market and I can’t wait. I have a few things to figure out, but I think some tasty breakfast treats are definitely in the offing. See you there!
